The Rubin in the Uniqato family is a relative newcomer to our winery’s portfolio.
Believed to have the most potential to become Bulgaria’s signature grape, this
authentic crossing between Nebbiolo and Syrah was created in Bulgaria in 1944 and is
grown only in the country’s South-Central region. The grape forms a strong, dark wine
that aptly carries the Uniqato name. A limited-release wine, although suitable for
aging, this wine is also approachable when young.
The grapes were picked in crates. They were crushed, then cold maceration was
carried out at 28-30oC. The wine was aged in French and Bulgarian barriques for 11
months. The batonage technique was conducted for 3 months. After aging in barrels,
the wine was bottled without processing, in order to preserve its components. After
bottling it was left to rest for 3 months in horizontal position, before the bottles were
let on the market.
