The Uniqato wines in our portfolio highlight the vibrancy and personality of lesser
known or indigenous Bulgarian grape varieties. Grapes were hand-picked. Following a
process of skin contact of 6 to 10 hours at approximately 16°C, the juice was drained.
Low temperature clarification was followed by fermentation atb 12 to 14°C for
approximately 20 days. Bottled in May 2006.
