Chemical Properties Starch white powder. Odorless and tasteless. It dissolves in water at room temperature and forms a colloidal solution. It is easy to dissolve in water under stirring, it can also be wetted with ethanol and then added to water. Making the aqueous solution acidic produces a water-insoluble free acid and the viscosity decreases. More stable to alkali. The addition of metal salts forms various water-insoluble metal salts and therefore does not apply to strongly acidic foods. It is not advisable to make long-term contact with metal during manufacture. When the aqueous solution is heated above 80°C for a long time, the viscosity decreases.
The aqueous solution of this product will be partially decomposed by the bacteria in the atmosphere, causing the viscosity to decrease. It is more difficult to hydrolyze than normal starch. Insoluble in methanol, ethanol and other organic solvents. The pH of the 1% aqueous solution is 6.7-7.0. The aqueous solution is more stable in alkali and worse in acid.
